The Chilean formula is usually one protein (chicken, shrimp, salmon, beef or kanikama), cream cheese and avocado, plus an extra such as chives or mushrooms. Most places let you pick two or three ingredients.
Nori-wrapped
The classic: crispy seaweed outside. Eat it as soon as it arrives.
Panko-wrapped
Fried and crunchy, very popular in Chile. Holds up better for delivery.
Teriyaki chicken
The best seller among people who don't eat raw fish.
Shrimp
Breaded or sautéed, great with cream cheese and avocado.
Salmon
Raw or tempura. Raw salmon is the one that most demands freshness.
Veggie

Rule of thumb: about 10 to 12 pieces per person with a normal appetite. Better to add gyoza or a hand roll than to come up short.
Pregnant women, young children, older adults and people with weakened immunity should choose cooked options: tempura, teriyaki chicken, cooked shrimp or veggie.
Sushi is a delicate food: don't leave it more than 2 hours at room temperature. Refrigerate leftovers and eat them by the next day at the latest.
The most common allergens are fish, shellfish, sesame, soy, gluten (soy sauce, panko, tempura) and egg (spicy mayo). Mention them when ordering.
Soy sauce is very high in sodium. If you watch your blood pressure, ask for the low-sodium version or use it sparingly.
The order should arrive cold or warm as appropriate, sealed and without a strong smell. If something's wrong, tell the restaurant right away.
